Hi all
Very sweet watermelon today. Carrots are in bunches. Apparently you can make pesto out of the tops. The beetroot and red onion go wonderful well in a ‘vege roast’. Cut into smaller chunks. Pop in other veg such as potato, kumara, cauliflower, pumpkin and whole cloves of garlic (unpeeled). Toss in a few spigs of fresh thyme. Season with pepper and salt (flakey salt has a more subtle flavour). Sprinkle in 4 tablespoons of olive oil and cook at 200C for around 35 minutes tossing every now and then. It’s heaven to eat!
